Brrr! Winter is officially here in Northern Alberta. I'm not complaining since we've had such a mild winter but cold days make me want to indulge in herbal teas and soups. All things warm really!
The recipe I'm going to share today is simple yet nourishing and likely made of everything you have on hand. Perfect to whip up as a quick lunch or dinner and sure to boost your immune system (also a bonus this time of year).
Green Goddess Healing Soup
Serves 3 (approx.)
Total Time: 1 Hr. (approx.)
1 TBSP. Olive Oil
3 rough chopped cloves of Garlic
3 chopped Green Onions
3 chopped stalks of Celery
3 chopped Carrots
3 Cups of Vegetable Broth (* can substitute Chicken if preferred)
3 'pinches' of dried Basil
Heat oil in a sauce pot over medium heat, add Carrots, Celery and Green Onion. Saute until tender then add Garlic and Basil. Continue cooking until golden, then add Vegetable Broth. Bring to a gentle boil and reduce heat to a simmer. Simmer up to an hour or until veggies are tender thru, serve in a mug.
Did you know both Basil and Green Onions are an excellent source of Vitamin K and Magnesium? The oils extracted from Basil can be used in treating cuts and minor skin infections, while Garlic helps improve our blood pressure. So much green goodness packed into such a uncomplicated recipe. Enjoy!
